Spicy Halloumi Skewers

These spicy halloumi skewers are perfect for grilling this summer or enjoying during an al fresco lunch.

What do I need?

  • 500 g halloumi
  • 1 tsp ground coriander
  • ½ tsp lemon juice
  • 1 tsp cayenne pepper
  • 1 red chilli, deseeded and finely chopped
  • 1 tbsp soy sauce
  • Extra virgin olive oil
  • Freshly ground black pepper

How do I make it?

  1. Heat the barbecue or a grill pan. If the halloumi is excessively salty, soak it in cold water overnight or for at least an hour, then discard the water. Dry the halloumi well with a kitchen paper towel.
  2. Cut the halloumi into 4 long pieces and thread them onto skewers.
  3. In a bowl, mix the ground coriander, lemon juice, cayenne pepper, and half the chopped chilli with the soy sauce and a drizzle of extra virgin olive oil. Brush this mixture over the skewers.
  4. Grill the skewers for 2-3 minutes on each side until golden and hot through.
  5. Remove from the heat and drizzle with olive oil. Add a couple of grinds of black pepper and sprinkle with the remaining chopped chilli.
