
Spicy Halloumi Skewers
These spicy halloumi skewers are perfect for grilling this summer or enjoying during an al fresco lunch.
What do I need?
- 500 g halloumi
- 1 tsp ground coriander
- ½ tsp lemon juice
- 1 tsp cayenne pepper
- 1 red chilli, deseeded and finely chopped
- 1 tbsp soy sauce
- Extra virgin olive oil
- Freshly ground black pepper
How do I make it?
- Heat the barbecue or a grill pan. If the halloumi is excessively salty, soak it in cold water overnight or for at least an hour, then discard the water. Dry the halloumi well with a kitchen paper towel.
- Cut the halloumi into 4 long pieces and thread them onto skewers.
- In a bowl, mix the ground coriander, lemon juice, cayenne pepper, and half the chopped chilli with the soy sauce and a drizzle of extra virgin olive oil. Brush this mixture over the skewers.
- Grill the skewers for 2-3 minutes on each side until golden and hot through.
- Remove from the heat and drizzle with olive oil. Add a couple of grinds of black pepper and sprinkle with the remaining chopped chilli.
