Apple & Pear Tomato Sauce

Looking for a unique condiment to add some special flavour to your burgers, pork chops, chicken breast or bacon sandwiches? Once it’s cooked, it’s almost like a very thick salsa, perfect for topping burgers, pork chops, or chicken breasts.

What do I need?

  • 700 g pears, peeled, cored, and roughly chopped
  • 300 g apples, peeled, cored, and roughly chopped
  • 110 g sultanas
  • 225 g onions, roughly chopped
  • 2 stalks celery, roughly chopped
  • 2 cloves garlic, roughly chopped
  • 900 g Roma tomatoes, roughly chopped
  • 600 mL cider vinegar
  • 25 g fine sea salt
  • 300 g Demerara sugar
  • 1½ tsp freshly ground black pepper
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg
  • 1 tsp ground cloves
  • 1 tsp ground cumin
  • ¼ tsp yellow mustard seeds

How do I make it?

  1. Put all the ingredients in a large saucepan and stir them together.
  2. Bring the mixture to a boil, then lower the heat and let it simmer for about 30 minutes until the fruits and vegetables are soft enough to crush.
  3. Blend the mixture until it’s very smooth using a stick blender. You may need to do this in batches.\
  4. Strain the blended mixture through a plastic sieve into a bowl to achieve a medium-thick texture similar to a vegetable soup.
  5. Clean the saucepan and pour the sieved mixture back into it.
  6. Bring the mixture to a simmer again, then reduce the heat to very low and cook for 1.5 to 2 hours. Make sure it only occasionally bubbles, stirring regularly to prevent it from sticking.
  7. Bottle the sauce in warm sterilised bottles while it’s still hot.
  8. Store the bottled sauce in a cool, dark place where it will keep for up to 12 weeks. Once opened, refrigerate and use within 2 weeks.
