Looking for a unique condiment to add some special flavour to your burgers, pork chops, chicken breast or bacon sandwiches? Once it’s cooked, it’s almost like a very thick salsa, perfect for topping burgers, pork chops, or chicken breasts.
What do I need?
- 700 g pears, peeled, cored, and roughly chopped
- 300 g apples, peeled, cored, and roughly chopped
- 110 g sultanas
- 225 g onions, roughly chopped
- 2 stalks celery, roughly chopped
- 2 cloves garlic, roughly chopped
- 900 g Roma tomatoes, roughly chopped
- 600 mL cider vinegar
- 25 g fine sea salt
- 300 g Demerara sugar
- 1½ tsp freshly ground black pepper
- 1 tsp ground ginger
- 1 tsp ground nutmeg
- 1 tsp ground cloves
- 1 tsp ground cumin
- ¼ tsp yellow mustard seeds
How do I make it?
- Put all the ingredients in a large saucepan and stir them together.
- Bring the mixture to a boil, then lower the heat and let it simmer for about 30 minutes until the fruits and vegetables are soft enough to crush.
- Blend the mixture until it’s very smooth using a stick blender. You may need to do this in batches.\
- Strain the blended mixture through a plastic sieve into a bowl to achieve a medium-thick texture similar to a vegetable soup.
- Clean the saucepan and pour the sieved mixture back into it.
- Bring the mixture to a simmer again, then reduce the heat to very low and cook for 1.5 to 2 hours. Make sure it only occasionally bubbles, stirring regularly to prevent it from sticking.
- Bottle the sauce in warm sterilised bottles while it’s still hot.
- Store the bottled sauce in a cool, dark place where it will keep for up to 12 weeks. Once opened, refrigerate and use within 2 weeks.
