A simple and easy family meal.
What do I need?
- 500 g spiral or penne pasta
- 250 g shredded meat from ½ roast chicken
- 2 x 200 g tubs Yumi’s Sweet Potato and Cashew Dip
- 1 cup grated cheese (we used pizza blend)
- Sea salt
- Freshly ground black pepper
- For the Topping
- ½ cup panko breadcrumbs
- ½ cup grated cheese
How do I make it?
- Cook Pasta according to packet instructions, drain, reserving ½ cup of pasta water.
- Preheat oven to 180°C fan.
- In a large bowl, combine cooked pasta, ½ cup of pasta water, chicken, Yumi’s Sweet Potato and Cashew Dip, and grated cheese.
- Mix well, season to taste, then spoon the mixture into an oven-safe baking dish.
- Sprinkle over the breadcrumbs and extra grated cheese.
- Bake for 25-30 minutes until the cheese is golden and the bake is heated through. Serve immediately.
