These colourful cookies bring a burst of fun to dessert time. They’re chewy on the outside, gooey on the inside, and packed with Skittles for a rainbow twist. Add a scoop of vanilla ice cream and you’ve got the ultimate playful winter treat.
Rainbow Ice Cream Sandwiches
What do I need?
- 100 g light brown sugar
- 100 g unsalted butter, softened
- 1 tsp vanilla bean extract
- 60 mL oat milk
- 300 g plain flour
- 1 tsp baking powder
- 1 tsp bicarb of soda
- Pinch of salt
- 150 g Skittles Fruits Chewy Lollies
- Vanilla ice cream, to serve
How do I make it?
- Preheat the oven to 175°C. In a large bowl, mix together the sugar, spread and vanilla extract until well combined. Stir in the oat milk.
- In a separate bowl, combine the flour, baking powder, bicarb of soda and salt. Gradually mix the dry ingredients into the wet mixture to form a stiff, smooth dough.
- Fold in the Skittles. Roll the dough into 10 to 12 balls and place them on two lined baking trays, leaving room for the cookies to spread slightly
during baking. - Bake for 10 minutes, or until lightly golden. Allow the cookies to
cool completely. - Once cool, sandwich the cookies together with a scoop of vanilla ice cream and serve immediately.
