This frothy latte is offering both a healthy indulgence and a comforting treat on a chilly day.
What do I need?
- 1 small beetroot
- 20 g fresh ginger
- 1/2 tsp pure vanilla extract
- 1/4 tsp ground cinnamon
- 1 1/2 cups unsweetened almond milk
- 1 tsp honey
How do I make it?
- Place the beetroot in a saucepan and submerge it with water. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for 30 minutes, until the beetroot can be easily pierced with a fork.
- Drain the beetroot, allow it to cool for 15 minutes, and then peel it. Place the peeled beetroot in a blender along with ginger, vanilla extract, and cinnamon. Set aside.
- Heat the almond milk in a saucepan over medium heat until it begins to simmer. Remove from heat.
- Pour 1/2 cup of the milk into the blender with the beetroot and blend until smooth, about 5 minutes. Pour the mixture into a mug.
- Use a milk frother on the remaining milk or blend it in a blender until foamy. Gently pour the foamed milk into the mug over the beetroot mixture, stirring with a spoon.
- Stir in the honey and enjoy!
