This rich, caramelised red onion chutney is easy to make and will take your cheese platters, burgers, and salads to the next level. Try it with warm goat’s cheese on toast for a simple yet impressive snack.
What do I need?
- 8 red onions, sliced
- 100 g caster sugar
- 100 mL red wine vinegar
- 100 mL red wine
- 1 tbsp JC’s Pure Australian Honey
How do I make it?
- Place the onions and sugar in a saucepan over medium heat. Cover and cook for about 10 minutes, stirring occasionally, until the onions are soft and starting to caramelise.
- Pour in the red wine vinegar and red wine, then simmer uncovered for another 10 minutes, or until the liquid has reduced and the mixture is sticky.
- Stir in the honey, mixing well to combine. Remove from heat and allow to cool.
- Transfer to a sterilised jar and seal. Store in the fridge and use within a few weeks.
