These spicy halloumi skewers are perfect for grilling this summer or enjoying during an al fresco lunch.
What do I need?
- 500 g halloumi
- 1 tsp ground coriander
- ½ tsp lemon juice
- 1 tsp cayenne pepper
- 1 red chilli, deseeded and finely chopped
- 1 tbsp soy sauce
- Extra virgin olive oil
- Freshly ground black pepper
How do I make it?
- Heat the barbecue or a grill pan. If the halloumi is excessively salty, soak it in cold water overnight or for at least an hour, then discard the water. Dry the halloumi well with kitchen paper towel.
- Cut the halloumi into 4 long pieces and thread them onto skewers.
- In a bowl, mix the ground coriander, lemon juice, cayenne pepper, and half the chopped chilli with the soy sauce and a drizzle of extra virgin olive oil. Brush this mixture over the skewers.
- Grill the skewers for 2-3 minutes on each side until golden and hot through.
- Remove from heat and drizzle with olive oil. Add a couple of grinds of black pepper and sprinkle with the remaining chopped chilli.
