Coriander Kale Chips

A perfect, easy-to-make party snack with a healthy crunch!

What do I need?

  • 1 bunch kale
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp ground coriander
  • ¼ tsp chilli flakes
  • ½ tsp sea salt
  • ¼ tsp freshly ground pepper

How do I make it?

  1. Preheat the oven to 130°C.
  2. Wash and thoroughly dry one bunch of kale, ensuring the leaves are completely dry. Moisture on the leaves can result in soggy kale chips.
  3. Remove the ribs from the kale and place the leaves in a large bowl. Drizzle the kale with olive oil, then sprinkle with ground coriander, chilli flakes, salt, and pepper.
  4. Using your hands, rub the oil into the leaves, evenly distributing the spices.
  5. Spread the kale out in an even layer on 2 baking sheets. Bake for 10 minutes, then rotate the pan, flipping any pieces that are starting to look crispy.
  6. Bake for another 10-15 minutes, closely watching the pan during the last 7-8 minutes to prevent over-browning. Allow the kale chips to cool to room temperature before serving.
