Pesto Caprese Strawberry Salad

Perfect for a light lunch or a stunning side dish at a barbecue, this salad is a celebration of the season’s best ingredients.

What do I need?

  • 100 g fresh strawberries, sliced
  • 16 fresh bocconcini balls, sliced into rounds
  • Pistachio pesto sauce
  • 3 tbsp Cobram Estate Classic Extra Virgin Olive Oil
  • 1 tbsp balsamic glaze
  • 1 cup fresh basil leaves
  • ⅛ tsp sea salt
  • ⅛ tsp freshly cracked black pepper

How do I make it?

  1. Slice the fresh strawberries lengthwise and place them in a large bowl.
  2. Drain the fresh bocconcini and toss them with the pistachio pesto sauce, olive oil, balsamic glaze, and fresh basil leaves in the bowl with the strawberries.
  3. Taste and season with sea salt and freshly cracked black pepper.
  4. Store covered in the refrigerator until ready to serve.
