Passionfruit & Mango Pavlova

This pavlova requires no cooking and is ready in just 20 minutes.

What do I need?

  • 300 mL double cream
  • 25 cardamom pods, seeds finely ground
  • 1 meringue base
  • 4 whole passionfruit
  • 1 fresh ripe mango, peeled, stoned, and sliced
  • 30 g coconut chips

How do I make it?

  1. In a large bowl, use a balloon whisk to whisk the cream and ground cardamom to almost stiff peaks.
  2. To assemble, spoon the cardamom cream onto the meringue base.
  3. Halve the passionfruit and scoop out the seeds. Decorate with the mango and passionfruit, scattering over the coconut chips as you go.
