Get into the summer vibe with this fruity mocktail featuring blueberries, lemonade, mint, and cucumber.
What do I need?
- 2 slices of cucumber, 1cm thick
- 2 sprigs of mint
- 40 mL water
- 30g Stoneybrook Frozen Whole Blueberries
- 240 mL clear, sparkling lemonade
- Ice
To Garnish (optional):
- More frozen berries
- Orange slices
- Chopped fruits
- Cucumber slices
- Mint leaves
- Citrus slices
How do I make it?
- Chop the cucumber slices and mint sprigs into small pieces.
- Bring 40 millilitres of water to a boil in a small pan.
- Add the chopped mint and cucumber to the boiling water. Turn off the heat and let the mixture sit for 2 minutes.
- Add a small handful of frozen blueberries and let them defrost for a minute, then crush them lightly with the back of a spoon.
- Strain the mixture. This infusion can be kept in the fridge for up to 24 hours and is enough to make four drinks.
- Pour the strained mixture into tall glasses. Add a handful of ice.
- Top up with sparkling lemonade.
- Garnish with additional frozen berries, orange slices, chopped fruits, cucumber slices, mint leaves, or citrus slices as desired.
- Stir gently to combine.
