Creamy Lemon & Salmon Alfredo

A rich and satisfying dinner for one person that’s ready in minutes. Just add tender salmon, a squeeze of lemon, and a handful of greens and you’ve got comfort food done right.

What do I need?

  • 80 g San Remo La Pasta Snack Alfredo
  • 100 g skinless salmon fillet,
  • cut into bite-sized pieces
  • ½ small zucchini, grated
  • ½ lemon, juiced (plus wedges to serve)
  • 1 tablespoon chopped parsley
  • Salt and cracked black pepper
  • Olive oil, for cooking

How do I make it?

  1. Heat a drizzle of olive oil in a small frying pan over medium heat. Add the salmon and cook for 3–4 minutes, turning gently, until golden and just cooked through. Set aside.
  2. Prepare the La Pasta Snack Alfredo according to packet instructions, stirring in the grated zucchini during the final minute of cooking.
  3. Stir through the lemon juice, cooked salmon and chopped parsley. Season with salt and pepper to taste.
  4. Serve with extra lemon wedges. Best enjoyed straight from the bowl, fork in hand
