Apple season is in full swing, so it’s the perfect time to level up your apple game. This sweet surprise is simple, wholesome, and sure to delight.
What do I need?
- 4 medium red apples (Fuji or Pink Lady)
- 200 g cottage cheese
- 3 tbsp honey, plus extra for drizzling
- 1 tsp cinnamon
- 1/4 tsp nutmeg (optional)
- 1/2 tsp vanilla extract
- 60 g walnuts, roughly chopped
- (reserve some for topping)
- 1 tbsp sultanas or raisins (optional)
- A knob of butter, for greasing
- Pinch of salt
How do I make it?
- Preheat the oven to 180°C (fan 160°C).
- Wash the apples and carefully core them, leaving the bottom intact to create a little base. If you like, slice off the tops and set them aside as lids for presentation.
- In a bowl, mix the cottage cheese with 2 tbsp honey, cinnamon, nutmeg (if using), vanilla, salt and chopped walnuts. Stir through the sultanas if using.
- Spoon the filling generously into the hollowed apples. Pop the little “lids” back on top if you kept them.
- Grease a baking dish with butter and place the apples upright inside. Drizzle a little honey over the tops, then add a splash of water to the bottom of the dish to help keep things moist while baking.
- Bake for 25–35 minutes, or until the apples are soft and slightly wrinkled but still holding their shape.
- Serve warm, topped with extra walnuts and a final drizzle of honey. Lovely on its own, or try it with a dollop of Greek yoghurt or a scoop of vanilla ice cream.
