Baked Apples with Cottage Cheese, Walnuts & Honey

Apple season is in full swing, so it’s the perfect time to level up your apple game. This sweet surprise is simple, wholesome, and sure to delight.

What do I need?

  • 4 medium red apples (Fuji or Pink Lady)
  • 200 g cottage cheese
  • 3 tbsp honey, plus extra for drizzling
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1/2 tsp vanilla extract
  • 60 g walnuts, roughly chopped
  • (reserve some for topping)
  • 1 tbsp sultanas or raisins (optional)
  • A knob of butter, for greasing
  • Pinch of salt

How do I make it?

  1. Preheat the oven to 180°C (fan 160°C).
  2. Wash the apples and carefully core them, leaving the bottom intact to create a little base. If you like, slice off the tops and set them aside as lids for presentation.
  3. In a bowl, mix the cottage cheese with 2 tbsp honey, cinnamon, nutmeg (if using), vanilla, salt and chopped walnuts. Stir through the sultanas if using.
  4. Spoon the filling generously into the hollowed apples. Pop the little “lids” back on top if you kept them.
  5. Grease a baking dish with butter and place the apples upright inside. Drizzle a little honey over the tops, then add a splash of water to the bottom of the dish to help keep things moist while baking.
  6. Bake for 25–35 minutes, or until the apples are soft and slightly wrinkled but still holding their shape.
  7. Serve warm, topped with extra walnuts and a final drizzle of honey. Lovely on its own, or try it with a dollop of Greek yoghurt or a scoop of vanilla ice cream.
